配制方法: | Use jacketed high shear mixer. Preheat to 200'F. Dissolve disodium phosphate and sodium chloride in 85% of the water. Preheat solution to 200'F. Preheat oils to 200'F, add preblended rennet casein and PURE-DENT B965 at medium slow speed. Add the salt solution. Mixing time is equipment dependent, but emulsification is complete after an elastic and tacky character is observed. Dissolve the citric acid and potassium sorbate in the remaining water and add to the emulsion. Mix until homogeneous. Pour into cheese mold and allow to cool. Refrigerate a minimum of 24 hours prior to evaluation. NOTE: Texture is easily modified by altering the ratio of hardened fat to oil in the formula. |
